The crab famers of Taixing – a county-level city administered by Taizhou city in East China's Jiangsu province – are currently hard at work collecting, sorting and releasing baby crabs, also known as zoea larvae, with spring being the key time for breeding.

The Jiangsha crab, a renowned product of Taixing, got its name from a poem in the Ming Dynasty (1368-1644) and they have been reared there ever since.

Taixing Jiangyuan Agriculture and Animal Husbandry Co Ltd has the largest crab operations in the city, with a farming area covering 2,930 mu (195.33 hectares). Over the past 10 years, it has worked diligently and consistently on improving and refining the quality of its Jiangsha crabs.

The rich river resources of Taixing have proved indispensable to the process, providing a unique advantage for the crab breeding industry.
