It's currently peak season for harvesting scallions and in Xinghua city, located in East China's Jiangsu province, the little delights are now going through the full chain of the harvesting, processing and production processes before finally reaching diners at home and abroad.

Li Jianshun, head of the Jianshun Fruit and Vegetable Professional Cooperative, said that in 2018 he turned over 66 hectares of land there to plant scallions, due to their short planting cycle and high yield.

"The cultivation of Xinghua scallions starts around Sept 1 every year and we can produce about 8-9,000 metric tons of high-quality scallions annually, which are supplied to factories and can generate over 10 million yuan ($1.38 million) in revenue," Li said.

The harvest season also requires a large number of extra farmhands to bring in the crop, adding more local job opportunities.

The scallions harvested from the fields are then transported to the processing site. In the production plant operated by Xinghua Hongsheng Foods, after cleaning, cutting, rinsing and drying, they're transformed into dehydrated scallions that are convenient for storage and shipping.

Hongsheng's products are exported to countries and regions such as South Korea, Japan, Southeast Asia, Europe and America all year round.
